This is bison chili.&#8221;<\/p>\n<p><a href=\"https:\/\/www.foxnews.com\/category\/celebrity-chefs\" target=\"_blank\" rel=\"noopener\">The meal<\/a> was featured in a recent episode of &#8220;Cast Iron Cowboy,&#8221; which has been renewed for a second season.<\/p>\n<p>&#8220;There&#8217;s not a lot of fat in the meat that&#8217;s in here,&#8221; he said.<\/p>\n<p>Rollins begins by browning two pounds of <a href=\"https:\/\/www.foxnews.com\/category\/food-drink\/food\" target=\"_blank\" rel=\"noopener\">ground bison<\/a> with diced yellow onion.\u00a0<\/p>\n<p><a href=\"https:\/\/www.foxnews.com\/lifestyle\" target=\"_blank\" rel=\"noopener\"><strong>CLICK HERE FOR MORE LIFESTYLE STORIES<\/strong><\/a><\/p>\n<p>He then adds Ro-Tel tomatoes with green chilies, tomato sauce, jalape\u00f1os, adobo sauce and his own chili seasoning. He also adds beans.<\/p>\n<p>&#8220;You&#8217;re getting an extra push of protein from the beans,&#8221; Rollins said. &#8220;But that bison meat is going to give you a lot of protein, a lot of power.&#8221;<\/p>\n<p>It&#8217;s a simple <a href=\"https:\/\/www.foxnews.com\/category\/food-drink\/recipes\/meals\" target=\"_blank\" rel=\"noopener\">one-pot meal,<\/a> but it carries the weight of cowboy history.<\/p>\n<p>On cattle drives more than a century ago, cowboys almost never ate the longhorns they pushed to market, Rollins said. But if they spotted a bison, <a href=\"https:\/\/www.foxnews.com\/category\/great-outdoors\/hunting\" target=\"_blank\" rel=\"noopener\">cowboys would shoot it<\/a> and turn it into a hearty stew to fuel the men who worked from before sunrise to after sundown.<\/p>\n<p><a href=\"https:\/\/www.foxnews.com\/food-drink\/moms-unexpected-secret-chili-ingredient-leaves-millions-tiktok-viewers-divided-absolutely-not\" target=\"_blank\" rel=\"noopener\"><strong>MOM&#8217;S UNEXPECTED SECRET CHILI INGREDIENT LEAVES MILLIONS OF TIKTOK VIEWERS DIVIDED: &#8216;ABSOLUTELY NOT&#8217;<\/strong><\/a><\/p>\n<p>&#8220;This is a frontier cowboy Western heritage meal classic,&#8221; Rollins said. &#8220;It&#8217;s always been around.&#8221;<\/p>\n<p>Bison has been making what he calls &#8220;a big surge&#8221; in recent years as a &#8220;really high protein meat that&#8217;s also really good for you to eat.&#8221;<\/p>\n<p>It&#8217;s naturally lean and <a href=\"https:\/\/www.foxnews.com\/category\/health\/heart-health\/cholesterol\" target=\"_blank\" rel=\"noopener\">low in cholesterol<\/a>, Rollins said.<\/p>\n<p>&#8220;Wild game is your best bet,&#8221; he added.<\/p>\n<p>Rollins said finding bison at a nearby store is easier than many people assume. &#8220;Nearly every grocery store of any size will have some bison meat,&#8221; he said.<\/p>\n<p>If not, online ranchers and suppliers can ship it directly to your door.<\/p>\n<p>Bison meat tends to be more costly \u2014 mostly due to limited supply, higher production and processing costs, smaller-scale ranching and &#8220;the unique challenges of raising and delivering bison compared with conventional beef,&#8221; according to the Institute for Environmental Research and Education, based in Washington state.<\/p>\n<p><a href=\"https:\/\/www.foxnews.com\/newsletters?cmpid=fnfirstnl\" target=\"_blank\" rel=\"noopener\"><strong>CLICK HERE TO SIGN UP FOR OUR LIFESTYLE NEWSLETTER<\/strong><\/a><\/p>\n<p>Yet &#8220;continued strong consumer demand has kept wholesale prices stable for the past four years,&#8221; said the <a href=\"https:\/\/nationalbison.org\/\" target=\"_blank\" rel=\"nofollow noopener\">National Bison Association<\/a> in Colorado.<\/p>\n<p>&#8220;Bison are making a comeback \u2014 at grocery stores, restaurants, and, slowly but surely, on America\u2019s wide-open plains,&#8221; Modern Farmer pointed out.\u00a0<\/p>\n<p>As always, Rollins cooks in cast iron \u2014 a tool he believes not only honors cowboy tradition but improves the final dish.<\/p>\n<p>Cast iron &#8220;is always going to bring you a <a href=\"https:\/\/www.foxnews.com\/category\/food-drink\/food\/cooking-basics\" target=\"_blank\" rel=\"noopener\">better flavor when you&#8217;re cooking<\/a> with it,&#8221; he said, especially when simmering chili or searing meat.<\/p>\n<p>&#8220;It holds heat well. So, really, you&#8217;re saving money. You can turn that burner down. You&#8217;re going to keep that simmer going most of the day, with a really low heat on cast iron.&#8221;<\/p>\n<p>Despite the frontier flair, Rollins insists cowboy cooking is for everyone.<\/p>\n<p>&#8220;You can cook anything I ever cooked in my life \u2014 in the house, outside, on top of the house, in the barn,&#8221; he said.
